What wheat actually does
Before you can replace wheat, you have to itemise it. Gluten gives dough its stretch and gas-trapping structure; wheat starches manage moisture; fermented wheat brings flavour. Strip wheat out and you lose four functions at once — which is why early gluten-free bread failed. It tried to replace an ingredient instead of replacing its jobs.
Job one: structure
A blend of rice flour, maize starch, potato starch and tapioca starch rebuilds the body of the crumb. No single flour can do it — each brings a different starch behaviour, and the blend is the recipe's real intellectual property.
Job two: stretch
This is gluten's signature trick: an elastic network that traps fermentation gas. Psyllium husk forms a gel that mimics that network, supported by plant-derived thickeners that hold bubbles through the oven spring. The result is a loaf that rises and springs rather than sets like cake.
Job three: moisture
Bamboo fibre holds water inside the crumb; a touch of glycerine keeps it from migrating out over shelf life. This pair is why a modern loaf still folds without cracking on day four.
Job four: flavour
Real bread flavour comes from fermentation, so we ferment — sourdough cultures grown on corn and quinoa flour bring the lactic depth that starch blends alone never had. Yeast does the lifting; sourdough does the singing.
The test that matters
Every iteration faces the same panel: people who grew up on wheat bread. When they stop noticing it's gluten-free, the recipe ships.
