Method

In a medium bowl, combine all the marinade ingredients, except the tofu. Cut the tofu into 1-inch cubes, add to the marinade and stir to coat well. Cover and leave to marinate for at least 30 minutes, or overnight for the best flavour.

Preheat the oven to 180°C and line a baking tray with parchment paper. Thread the marinated tofu onto 8 wooden or metal skewers, spooning over any remaining marinade.

Bake for 20 minutes, turning the skewers halfway through until the tofu is golden. Alternatively, cook on a griddle pan, under the grill or on a barbecue.

Meanwhile, make the tzatziki by combining the yoghurt, coarsely grated cucumber, finely grated garlic, lemon juice, olive oil, salt, pepper and roughly chopped fresh herbs in a bowl. Stir well and set aside.

Prepare the salad ingredients and arrange them on a serving platter. A few minutes before the tofu is ready, warm the pitta breads in the oven.

Serve the tofu skewers with the warm pitta, tzatziki and fresh salad. Fill the pittas with your favourite toppings and enjoy!
