
Vegan Stuffing with Cranberry, Thyme and Pine Nuts
Easy gluten-free vegan stuffing made with cranberries, fresh thyme and orange zest. A delicious seasonal side dish that's perfect for festive meals.
Ingredients
- 5 oz BFree Homestyle Sandwich White Sourdough Loaf, made into breadcrumbs
- 2 onions, chopped
- A drizzle of olive oil
- A handful of pine nuts or mixed seeds, roughly chopped
- 4 oz dried cranberries, chopped
- 2 garlic cloves, minced
- Fresh thyme
- Zest of 1 orange, grated
- Salt and black pepper, to taste

Method
Heat the olive oil in a saucepan over a medium heat. Add the onion and garlic, then cook until softened.
Remove the pan from the heat and stir in the breadcrumbs, cranberries, thyme, orange zest, seeds, salt and black pepper until well combined.
Spread the mixture evenly over a baking tray and drizzle with a little olive oil.
Bake at 180°C until golden and crisp, about 20–30 minutes. Serve warm.
